Joy Olsen was born in Prince Albert, Saskatchewan. She took her first pottery class at the age of 12, but did not seriously pursue the craft until early 2002. During her high school years she experimented with various art forms including sculpture with soap, clay and plaster as well as paper maché jewellery.

She moved to Vancouver in 1974 where she took a course in silver smithing. She also designed appliqué quilts, woven baskets and created mosaic tabletops.

In recent years Joy has done a series of body casting using plaster of Paris, moulding torsos, faces and the bellies of pregnant women. Some of these casts have been used to create bowls.
